Mmmm Steak Fettuccine Alfredo

Yes this is kind of like Chicken Fettuccine Alfredo but instead of chicken you use steak. I started making this about 2 years ago, when I was looking for something to make for dinner and saw the sauce and pasta in the pantry. I had to really think about what meat to put with it, as I knew I didn't have any chicken left. I remembered that the night before we had steak, so I opened the fridge and to my surprise the steak was still in there. I warmed it up in a pan with a little olive oil, salt, pepper, and minced garlic. My kitchen was starting to smell so wonderful. I boiled the pasta and warmed up the sauce after mixing it with the steak, this was just too simple, but I was a little afraid that in the end it would not taste right.

Goodness, how wrong could I be? Everyone loved it and hubby even commented that I had to add it to my collection. I have been making it about once a month since.

1 lb of thinly sliced steak or left overs (cut up in bite sized pieces)
1lb of fettuccine pasta (cooked as directed)
1 jar of Alfredo sauce (any kind you like)
Minced garlic
Pepper
Salt
Olive Oil (just enough to have a little in the pan)

Warm up of fry up steak with oil, minced garlic, salt, and pepper, Once done add the sauce and warm it up. Serve on top of the pasta. Enjoy!!!

Tonight for some reason it just about melted in your mouth. Mmmm

Mr. Smiley gave Mommy a Boo Boo

The baby commonly is known around this full house as Mr. Smiley. Every child has had a nick name through their first year. Mr. Smiley got his as soon as he started to smile, why?, because the little cutey does not stop smiling. Okay, so he does have the occasional where there is no smile on his chubby face, but those moments are few and far between.

The other night we were having our normal breastfeeding session before beddy bye time. All was going great, UNTIL I sat him up to get the excess air out of his wiggly body. My little angel decided to find out just where his food comes, he grabbed the nipple. Yup, he grabbed right a hold of it with his whole hand. This is when I found out just what a grip Mr. Smiley had. As I was trying with everything I had not to scream out in pain, I looked at his face while also trying to pry his fingers off of me, I looked at his face.

There it was, the biggest and brightest, full, look I have a dimple SMILE!! I swear the child was almost going to laugh. He just thought he was being so funny. So what could I do? After I finally freed myself from his baby death grip I just smiled at him.

He is just the most precious baby, don't get me wrong, all of my children are, but this moment although painful showed me that Mr. Smiley already knows that Mommy can melt and forget everything that is going on if he just smiles up at her. Paso Del Norte ECI Program and my family

Today we had the intake interview with a place here in El Paso, TX called ECI. Early Childhood Intervention, is an awesome resource for people whos children 3 and under have special needs. In my house the Doctors are questioning if my 2 year old is autistic. The place that came out to my house today was the Paso Del Norte ECI Program.

Tomorrow my 2 year old will be getting evaluated and then hopefully we can start getting some help for him. To me this is just great as we have been dealing with trying to get him evaluated for over 2 months. I found ECI on twitter, LOL about 2 weeks ago and TaDa!! They def work fast and I am nervous yet excited for all the good things that could begin for my son.

ECI offers some wonderful programs to not only help the child, but also the family. They have therapy and community resources available.

So until tomorrow, i hope everyone has a wonderful evening.

Night One of the No Fun Room

Well my daughter has survived one night in her "room of no fun". I think she actually went to sleep better, but she won't admit that. So far today, she has been helping and listening much to my amazment. I guess we will see how long the goodness will last, I will take one whole day of niceness and I will be satisfied. I hope everyone has a great day. I am off to the the household duties of a stay at home mommy.

Fun in the sun that turned into no fun at all.


Today has been such a great day for the kids. First they were allowed to paint outside and that made for some very interesting pictures. Next they had a picnic lunch, but the dog made us cut that short. lol This afternoon they played outside with a friend and even had a popsicle.

Then the fun happened! My six year old came into the house and demanded that she was going to the mailbox, mind you our mailbox is about 3 blocks away. I said "No!!" and she through a fit and would not calm down. She even walked out of the house after I told her to sit for a little bit. I went out and made her come back into the house and take a seat. So needless to say I called daddy, I say I am going to call him a few times a day, but don't actually call. This time I did and I think she was quite shocked when I handed her the phone.

Her punishment is a nice empty room for a few days. No T.V., No toys, and in her words nothing for her to do. lol I told her she still has all her books, a dresser full of clothes, and a bed so she will have plenty to do.

After emptying her room I looked at my oldest son and told him to go and have a look at her room. I also told him that if he didn't keep his room picked up then his room would look just like that.

I suppose I was a mean mommy today, at least just a little bit. LOL

Sorry

I am so sorry I have not kept up with this. I am back in the game now and will totally keep this updated.
There is a lot going on around my house lately to which I will def. have a lot to say about it.
I had the opportunity to try out a few items a couple months ago and tomorrow i will write about those products, they are wonderful!!

Okay I am off to get 4 littles ones to bed and will be back tomorrow.
